King of crackling, our boneless pork belly joint makes a mouth-watering roast if you don’t want the hassle of carving round our belly pork joint on the bone. Its critical to get some crispy crackling – so start with a gentle heat to tenderise the meat and then short, high temperature blasts to crisp up the skin on the outside.Â
Try stuffing with thyme, apricots and pine nuts and slow-roasting for a tender, sweet meat, easy to carve and even easier to eat! Roast for 40 minutes per 500g and check it reaches a core temperature of minimum 75°C. I often cut off the fatty skin at the end of cooking and grill or blast in hot oven separately to ensure brilliant crackling.
