The ideal larger, slow cook joint for a gathering of friends or family.
A good balance of internal and external fat self bastes the joint as it slowly cooks preventing it from drying out. A big joint can even be cooked overnight in a really low oven, producing supremely tender, almost ‘spoonable’ pork.
Perfect for low and slow roasting, Pork Shoulder on, or off the bone, is very moist. Try cooking the upper layer of fat and skin separately in a hot oven to get the best crackling.
