Using this high welfare Scottish Sea-reared trout, the fine fillets are cured using a traditional ‘London cure’. We then smoke them over smouldering oak chips to obtain a very high quality product that will go head to head with any smoked salmon, but with a very refined flavour.
Please note that pack sizes may vary from 1 or 2 pieces depending on size of fish filleted.
May contain small bones.
For best results, thinly slice and use as a canapé with a twist of fresh lemon. Delicious too, folded into lightly scrambled eggs or as the consummate accompaniment to a smoked fish platter.
