Our free-range ducks are produced by Creedy Carver, whose slow-grown ducks enjoy a large grass range and water for bathing. Being slow-reared, they are richer and fuller in flavour than standard farmed ducks, with less fat and satisfying, succulent meat. Dry plucking and hand finishing adds to the quality of the finished product and means you can look forward to delicious, crispy skin too!
Three weight ranges are available, starting from our smallest 1.7–1.9kg size (ideal for 4 people) to our largest 2.7–2.9kg (which will feed up to 6 ).
“Preheat your oven to 220 degrees C (200 degrees C Fan) then prick the skin around the legs and season. Place a halved red onion inside the cavity with 3 star anise then roast on a rack in a roasting tin for 45 minutes per kilo plus 10 minutes. Rest, covered in foil, for 30 minutes before serving.”
