With very few British farmers rearing free-range guinea fowl, we had to look a little further afield across the Channel to a group of farmers leading the way in sustainable free-range farming for our free-range guinea fowl.
On our supplier’s French farms, our free-range guinea fowl are given free access to a large outdoor pasture with plenty of grass to graze and trees for shade as soon as they are fully feathered and can maintain their body temperature outside. Their healthy, natural diet includes cereals as well as forage and they are grown longer for maximum flavour before travelling a short distance to the group’s slaughter sites. The result is an unbeatably tasty bird with firm, full-flavoured meat that’s perfect for dinner parties or Sunday roasts.
Baste with butter and wrap in bacon before roasting as you would a chicken.
