We grow our lamb slowly, only ever feeding a diet of grass for the entirety of their lives. As a result they take a little longer to finish and and are described as Hoggets. This means our legs, like the lamb shoulders, are bigger than those offered in supermarkets and other online outlets. The slow maturity of the meat creates a richer depth of flavour and marbling than you find in younger, and smaller joints.
Best served with our Potts lamb and port gravy (found in the pantry section).
