The ultimate celebratory joint for a big party or Christmas!
Made to order only, we bone out a goose but leaving part of the wing bone in and drumstick bone for presentation , we use free range sutton hoo chicken fillets and pheasant fillets to layer the roast with a line of Wild Boar orange and thyme stuffing that runs central down the bird .
The bird combination is chosen for size; (pheasant fillets in the centre, then the chicken fillets and the goose on the outside) and colour (red meat, white meat and then red meat) so that you can see the contrast when serving. The fattier goose on the outside bastes the leaner fillets inside making cooking incredibly simple.
Just carve and serve to impress your family and friends.
