We created the idea of a game roulade when we first started the business and it has introduced thousands of people to the delights of eating game. With no bones or waste, the roulade is great roasted in the oven and eaten either hot or cold. As a starter its hard to beat cold, finely sliced with some relish and garnish. The dark meat from the wood pigeon and the lighter meat from the pheasant fillets making a lovely contrast on the plate. The stuffing in the center of the roulade is a wild boar sausage meat gluten free stuffing with is wrapped in smoked streaky bacon

To make a sauce use the juices collected in the foil. Thicken with butter and wine, in a pan over heat.
