Our boned and rolled brisket is an inexpensive way to create a tender, rich and juicy roast.
It’s cut from the forequarter and has an open-grained texture and rich flavour that cannot be beaten by any other cut. It is not as lean as silverside or topside joints and the extra fat
creates the ultimate in comfort food. This joint is very simple to cook, as your oven does all
the hard work over several hours of pot roasting.
Lightly season the brisket joint and place into an ovenproof roasting dish. Add a good glug of wine and a whole pouch of beef stock and cook for a good 4-6 hours at 140C. Top up any liquid if needed during this time.
