Our whole beef fillet is the most prized joint on the carcass due to its tender and melt-in-the-mouth texture. This is because this muscle along the back does very little work, making it a very lean cut which is suited to quick cooking. It is also the joint to use to make a beef wellington, if you are feeling adventurous.
If you want a smaller size than a joint, than why not buy one or two fillet steaks?
