Delicious when slow cooked, oxtail stew is rich in flavour and tender with the beef falling off the bone. Oxtail is also well known for its use in soups, with the gelatinous meat being ideal as a base for soup making (marrow bones would be a more economical alternative).
Slow cook with a mirepoix (chopped onion, carrot, and celeriac/celery), stewing in red wine or a favourite ale. Serve with creamy mashed potato, seasonal vegetables, and hot English mustard.
