The royalty of early season game eating, a plain roasted young grouse in August or September is simply divine.
Season, seal in a pan, roast for 15-20 mins, rest covered  for 5-10 mins, and serve with bread sauce, crisped potatoes and seasonal greens. Yum, yum!
