These breast fillets are known as  ‘supremes’ – the technical term for a breast fillet which includes the wing bone.

We leave the wing bone on to maximise the amount of meat that you get. For cooking and serving you can treat it like a gamey chicken breast.

Cook as a chicken breast fillet. Brown, seal in a pan then roast for 10 minutes. Rest for a further 10.
