Hare is very rich and gamey – the ‘vindaloo’ of the game world. Hare is commonly casseroled in the traditional way with its blood, known as jugged hare. However it is difficult for us to package and send the blood and as the joints contain so much blood we believe jugged hare recipes work just as well without additional blood.
The portioned hare is butchered into five joints – four legs and the saddle (the back) and feeds 4-6 people easily depending on size of the hare
We also offer the options for you to select your hare in fur for you to skin and portion at home.
Please note: May contain the liver and kidneys
Traditionally ‘jugged’ – a casserole with the hare’s blood. It is still good replacing the blood with red wine.
