The incredibly delicate and rich loin fillets from the saddle can be flash fried and eaten rare. They are perfect if you are feeding 2 to 4 people.
You just need to run the knife along each side of the backbone to remove the loins on each side.
Please note: May contain the liver and kidneys, Two weight options
Simple to cook, just cut the loin fillets off the saddle and pan fry for a minute or two or roast the saddle as a whole piece on the bone. 15 minutes at 180c (rest for another 10 mins) should be enough but use a temperature probe to doube check you dont overcook.
