The Mallard is the largest of the the wild ducks and is what most people think of when eating wild duck. One bird will feed 2 people, and can be roasted with a quartered orange placed in the cavity. It has little fat and much more tasty than a farmed duck!
Unlike the oven ready image, the bird is likely to show some bruising or blemish on the skin, and this is quite normal. The ‘in feather’ image shows both a female which is browner in colour mallard and the male drake with the green head and body plumage is mopre colourful .
The boneless option has the end of drumstick bone and wing bone left in for presentation
Roast for 30 minutes, rest for 15 and serve pink.
