This great value superfood has fallen out of favour in recent years, which is a shame as it is jam packed in iron, protein, thiamine, folate, selenium, phosphorus, zinc, omega 3 and several B vitamins – a great way to rack up healthy amino acids. They can be braised for a few hours in a homemade pie or pan fried quickly, served tender and pink with some creamy mash and veg.
I like them simply pan fried and served on toast
