This fat has been trimmed off pig joints where there is more than enough on the joint for crackling. It is presented in long thin strips which makes it easier to cut or render. It can be rendered for lard (roasted in a dish in the oven, retaining the liquid when cooled) or be finely diced and included in dishes to add juiciness, shape and texture. Pork fat is complementary to other meats, and for example, can be added to a game casserole – in a ratio of 250g pork to 1kg game – as it game meat often lacks fat. Can also be used for making black pudding and salami.
Preferred by many making their own venison (or game) sausages using our venison trim. We recommend a ratio of 10% pig fat to 90% venison trim plus seasoning.
