Our ’skate wings’ (technically ray) are sourced from seasonally and regionally sustainable stocks that support our inshore day boat fisheries. They are a cartilaginous fish (no bones) and are easy and quick to poach, grill, bake or fry. Skate wings take herbs and spices really well and are delicious poached in a court-bouillon or with a paprika rub. The meat when flaked off the wing (or pulled) makes the most delicious fish cakes or for a terrine.Â
For best results: Simply pan fry in brown butter or remove the raw meat from the cartilage and flour and fry in breadcrumbs for a delicious schnitzel.
