Teal are the smallest and most exquisite in texture and flavour wild duck.
Being small, a whole bird makes one (relatively small) portion. Big eaters will need at least two! As with all the whole wild ducks, cooking couldn’t be simpler – roast in the oven and make a nice gravy from the juices. Highly recommended to all game connoisseurs.
Roast for 10 minutes at 180 degrees, rest for 10 minutes
