The tenderest cut from the top of the loin, our venison chops are simply cooked by pan frying and serving with your favourite accompaniments. The advantage of chops, rather than the loin steaks, is that the bone adds to the taste although some may find the bone a bit fiddly.
All our venison is hand butchered from wild deer, roaming the coastal marshes and forests of Suffolk, making it very low in fat and carbon neutral in emissions.
Pan fry each side for a minute until golden then whip in the oven on medium heat for a further 5 minutes for medium rare. Rest in a warm place for another 3-4 minutes before serving with redcurrant jelly.
