The loin fillet is cut from both sides of the deer saddle and has been larder trimmed. It is a very soft and tender cut, preferred by most chefs. The loin fillet has no fat and does not shrink when cooked, so there is very little waste.Â
In response to customer demand, we’ve expanded our offering to include the loin fillet from three different deer species. Choose from smaller fillets sourced from Muntjac and Chinese Water Deer, or opt for the larger, more traditional fillets from fallow deer.
