Our take on the beef wellington, the Venison Wellington is the ultimate Christmas centrepiece. It consists of a prime piece of loin fillet steak, coated with pâté and duxelles mushrooms, which is then wrapped in puff pastry. The venison loin fillet has been trimmed making the centrepiece simple to slice and serve.
There are two size variants 600g which will serve 2 to 3 persons and a 900g which will serve 4 persons. The wellington sizes may vary slightly as they are all made by hand, but the serving recommendations are based on meat content, rather than product weight.
