The smaller deer species provide a fantastic summer party wow factor when cooked over the barbeque.Cook whole on a spit or ‘ASADO’ style in the South American way over the hot grills from an open fire.Â
There is a choice of two species – Muntjac or Chinese Water Deer venison. Muntjac is regarded by many as the best eating venison while others prefer the lamb like flavour of the Chinese Water Deer. The weight range for whole or jointed carcass is from 5kg to 7kg which will feed 10 to 16 people (with a meat yield of approx 60%).
Please note that the offal is not included with this item.
If cooking the Argentinian way, make a meat cross or find grills used for reinforcing concrete. Cook slowly over the hot grills, but do not overcook, and serve with salads and red wine.
